Sweet Potato Quinoa Burrito Bowls

Ingredients

For Cilantro Lime Dressing

  • 1 cup chopped cilantro
  • 1 garlic clove
  • 1 tablespoon honey
  • 1/4 cup fresh lime juice
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper


For Sweet Potato Quinoa Burrito Bowls

  • 2 sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 3 cups cooked quinoa
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1 ripe large Hass avocado, diced
  • 1/4 cup cilantro, chopped

Method

For Cilantro Lime Dressing
  1. Add cilantro, garlic, honey, lime juice, olive oil, salt and pepper to a blender or food processor and blend until smooth.

For Sweet Potato Quinoa Burrito Bowls

  1. Preheat oven to 400°F.
  2. Place sweet potatoes on a rimmed baking sheet lined with parchment paper. Drizzle with olive oil, sprinkle with cumin, salt and pepper, and toss to combine evenly.
  3. Bake sweet potatoes for 20-25 minutes or until tender.
  4. Evenly divide quinoa among four bowls. Top with sweet potatoes, black beans, tomatoes, onion and avocado. Drizzle with cilantro lime dressing and sprinkle with cilantro.
