TikTok Chopped Green Goddess Salad (Baked by Melissa)

Say hello to your new favorite salad recipe! Inspired by Baked by Melissa's viral recipe this Chopped Green Goddess Salad combines crunchy veggies with a creamy herb dressing to create a texture similar to guacamole. Plus, it's perfect for eating with tortilla chips!

Ingredients

For Green Goddess Dressing
  • 1 cup cilantro
  • 1 cup fresh spinach
  • 2 garlic cloves
  • 1/4 cup pine nuts, toasted
  • 1/4 cup Parmesan cheese
  • 1/3 cup freshly squeezed lemon juice
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

For Green Goddess Salad

  • 1 small head of cabbage, chopped
  • 1/2 English cucumber, quartered lengthwise and chopped
  • 1 green bell pepper, seeded and chopped
  • 1 bunch radishes, cut into matchsticks
  • 1 bunch green onions, thinly sliced
  • 4 hard-boiled eggs, chopped
  • Tortilla chips, for serving

Method

For Green Goddess Dressing
  1. Add cilantro, spinach, garlic, pine nuts, cheese, lemon juice, olive oil, salt and ground pepper to a food processor or blender and blend until desired consistency.

For Green Goddess Salad

  1. Add cabbage, cucumber, bell pepper, radishes, onions and eggs to a large bowl and mix.
  2. Drizzle green goddess dressing over the salad and toss to combine. Serve with tortilla chips for scooping.
