Tropical Trail Mix

Yields: 6 cups
Ingredients

1/4 cup honey (or maple syrup)

1 tablespoon olive oil

1/2 teaspoon ground ginger

1 cup unsalted raw cashews

1 cup shelled unsalted pistachios

1 cup raw almonds

1/2 cup banana chips

1/2 cup dried dates

1/2 cup dried mango
-
1/2 cup dried papaya
-
1/2 cup dried pineapple

1/2 cup coconut chips
-
1/2 cup dark chocolate, chopped (optional)
Method
1. Preheat oven to 350°F. Line rimmed baking sheet with parchment paper.
2. In a large bowl, whisk together honey, oil, and ginger until combined. Add cashews, pistachios and almonds to bowl and toss to coat. Spread nuts onto prepared baking sheet and bake 15 to 20 minutes, stirring halfway through, until golden brown. Remove from oven and let cool completely.
3. Meanwhile, cut any larger fruit pieces into smaller bite-size pieces. Add fruit to large mixing bowl and combine with toasted nut mixture. Stir in coconut and chocolate (if using). Store trail mix in airtight container until ready to eat.
